泡臘八蒜是中國(guó)北方，尤其是華北地區(qū)的一個(gè)習(xí)俗。顧名思義，就是在陰歷臘月初八的這天來(lái)泡制大蒜。其實(shí)材料非常簡(jiǎn)單，就是醋和大蒜瓣兒。做法也是極其簡(jiǎn)單，將剝了皮的蒜瓣兒放到一個(gè)可以密封的罐子、瓶子之類(lèi)的容器里面，然后倒入醋，封上口放到一個(gè)冷的地方。慢慢地，泡在醋中的蒜就會(huì)變綠，最后會(huì)變得通體碧綠的，如同翡翠碧玉。老北京人家，一到臘月初八，過(guò)年的氣氛一天賽過(guò)一天，華北大部分地區(qū)在臘月初八這天有用醋泡蒜的習(xí)俗。
